There will likely be some residual butter on the work surface, and the dough will start to pick up that butter as you work it following its rest (i.e., it will become incorporated into the dough). I haven't made this bread in ages, so unfortunately I don't have any very specific visual/tactile indicators off the top of my head, but essentially the counter or mixer bowl should look a little less greasy as the dough pulls in that remaining butter. All spot on and behaved just as it should with wonderful results. I will be making this again. I will admit that I was afraid the dough would stick to the bowl when rising, as there was no instruction to grease the bowl, but there was no problem at all getting the dough out.
